Chocolate Raspberry Terrine

Each bite of this frozen dessert combines rich, creamy chocolate flavor and the intense fruity taste of ripe raspberries.

6 oz/170 g bittersweet chocolate

1 cup/250 ml cream cheese, at room temperature

1/2 cup/125 ml icing sugar

2 cups/500 ml fresh raspberries

Raspberry Syrup (page 305)

 

1. roughly chop or shave the chocolate. Place in a bowl set over a pot of simmering water until chocolate is just melted, stirring occasionally.

2. Soften the cream cheese with a rubber spatula. Add sugar and melted chocolate. Stir until well combined and smooth. Gently fold in 1 cup (250 ml) of raspberries.

3. Spoon mixture into an 8-1/2"x4-1/2" (1.5-L) loaf pan lined with plastic wrap or, for individual servings, scoop by 1/4 cup (60-ml) measures into medium-sized muffin papers. Drizzle each serving with Raspberry syrup and garnish with remaining raspberries.

Makes 10-12 servings.
