Sloppy Joes

Life just wouldn't be the same without Sloppy Joes, would it? After a little fooling around, we came up with this meatless version, which is so like the original (as best as we can recall it, anyway) that it will fool anyone who is not paying close attention.

2 pounds tofu, frozen, thawed, and crumbled

1/2 cup whole wheat flour

5 Tbs. soy sauce

1/2 tsp. pepper

1 onion, chopped

1 bell pepper, diced

1 28 oz. cans tomato sauce

1/2 tsp. turmeric

1/2 tsp. cumin

1 tsp. dry mustard

3/4 tsp. chili powder

1/4 tsp. pepper

1/2 tsp. salt

3 Tbs. molasses

2 Tbs. cider vinegar

water

 

1. Preheat oven to 350 degrees. Combine the tofu, flour, soy sauce, and pepper, and knead until it sticks together.

2. Bake in a sparyed baking pan for about an hour, stir/scraping occasionally (as if making Soysage).

3. Sauté the onions and bell pepper in a little water until soft. Add the tomato sauce and the seasonings and simmer for ten minutes.

4. Add the molasses, vinegar, and the cooked tofu. Heat throughly, adding water as needed to make it sloppy. Serve with buns and oven fries, and a green salad or coleslaw. Raw apple cake or any pie works as dessert.

Serves five or six.
